Also what should I be doing when I do start? The challenges or learning to use the 6B and new inputs correctly? Any aspect of her game I should learn to use or should I dive into everything and familiarise myself? Sorry for the double question it wouldn't fit in the word count :)
If you're having issues with basic inputs and your execution isn't great then I'd first suggest sitting in training for a while with various different characters and practice doing all their moves. It'll help you learn the timing and inputs necessary to perform moves and combos in the game, and using more than one character will just help you get a feel for how the game handles overall.
And to answer you first question, Litchi is a semi-execution heavy character, but her difficulty comes more from situational requirements for combos such as what mode she is in, where her staff is, what orientation it is set in, where you are on screen, etc.
The actual inputs for her combos and whatnot are not that hard though, so once you get accustomed to BlazBlue's combo and input system you'll be able to perform her combos pretty easily.
After you get used to using new inputs and have gotten a feel for how the game handles and are ready to actually begin learning her just start off with familiarizing yourself with her normals and special moves. Use them at different distances, on block, on air hit, on counter hit, etc. and then start seeing what gatlings she has. 5B > 6B, 5B > 2C all that jazz. Just try to get a general understanding of how her attacks behave. Once you've done that look up some combo videos and try to replicate them. You don't need to learn every single combo and all the advanced stuff, but just enough to help you understand how she works.
After that look up some match videos, take notes and pull as much from them as you can and then hit up some matches and start trying out what you've seen. Trial and error, lots of studying and playing and you'll slowly begin to understand what you need to do.
