Who is best Shiki?

I've only read the manga but I've heard good things about the anime setting the mood well - apart from the hair, I suppose. Haven't heard a single thing about the novel, though I would expect it to be better overall given how the story's very headspace-y and that's usually way better explored in text.

Could you explain how/why you rate things? (personally I just give things a random number without actually thinking about it)

For a while now, when it comes to anime, it's been mostly a round-up of the episode ratings, then averaging that out, with minor corrections up or down, depending on how I felt about the show overall.
The way I rate an episode is they'll always start with a 5/10, and get a better score with scenes I like, and worse scores with scenes I dislike. This can range from pretty much every aspect of the show, really. Soundtrack, animation, direction, voice-acting, writing, tempo. It's all obviously subjective at least in some level (you can't deny OPM has fight scenes that looked cool, but whether they were a + or not really depended on whether I felt the scene had a purpose at all, for instance).
Rounding it all up, I'd say that anime I've rated 75 or more are anime I'd recommend for most people.

Follow-up question: have you considered checking out the Anilist Discord? I mean, it's basically IRC in a lot of ways, but some more people have joined. Not necessarily voice-based either.

I used to be in a Skype call with a couple of e-friends like a year back or so to play videogames and just fuck around, but haven't since
I'm usually spending my time either weebing or working nowadays so I don't get to associate with people through voice much

Why did you dropped BEN-TO? Planning on watching it...

I dropped it twice actually! I gave it a second try at some point, and I regretted it.
First, the comedy. As most anime comedies go, I just didn't find it funny. It felt like it had no impact at most points that it was going for the good old boke + tsukkomi, and otherwise it just wasn't that inspired.
The action was subpar as well. Not that well animated, and most times just felt incredibly slow.
The premise was absolutely retarded but that's kind of what it was going for, I suppose, so congrats for that!
Maybe the manga's much better, a lot of my problems seem to come down to joke/action execution.

Nope. Never liked its design and for the longest time I thought keeping a list was pointless, so I didn't really make one.
Then I found out anichart existed and one day I was just really really bored so I made a list there and I regret it ever since.

Do you have shit taste?

The shittiest, as in, the one where I actually think it's pretty good and only hang out with people with similar taste.
