are you a professional baker! you bake and cook really nice food(: wonder why my cake sometimes turn out dense and heavy when I baked them. (suppose to be like sponge cake ><)

Aww~ thank you dear!:) I'm far from professional! A dense cake could be due to the ratio of you flour and eggs or your folding technique!:) don't worry practice more, you'll improve!:)

does it matter if i substitute cake flour with plain flour/all purpose flour? if yes, what will the difference probably be? tia!

Are you looking at my cake recipe?:) cake flour is suppose to provide better 'quality' cake of course. But it really doesn't matter to me. :D
