Which shops do you miss that aren't in business anymore?

Wilko for sure. It was the last place left on the high street that still sold wine and beer making equipment and ingredient kits. You can buy it online, but it weighs so much that the postage costs a fortune. There are now no shops anywhere in London that sell this stuff.
When they announced their closure I went to every Wilko store within a 5 mile radius (four of them) and bought up every kit that they had left. It has a long shelf life so I'm ok for another 3 years or so.
The other one is Maplins (also Tandy, going further back in history). They were the last place on the high street selling electronic components (capacitors, transistors etc). Again, you can buy it online, but the items are often very low value (a few pence), so paying 3 or 4 pounds postage is a real hit.
I also miss Wilko and Woolworths for their pick and mix sweets. You can buy those elsewhere, but not as good value.
Closer to home, my local Poundland shutdown which is a pain, but there are others a bit further away.

I miss real products :(
Today they're selling modified products that look like real products but are tasteless and/genetically modified.
