That was from before he was exposed to color, he just existed in a white void for no one knows how long, even Ink has said he isn't sure time even existed there...

ignoring the ghost, part of his job is to remember, that's why he writes everything down. So even when his memory fails him he can rediscover the information so no timeline is forgotten. But sometimes he will remember things from well I just know of it as "The White"
