When they've finished the whole class, or a year, whichever is shorter.

Asalaamualaykum sheikh I'm interested in seeking knowledge with my local teachers but I'm not sure on how to approach them. Is it bad adab to ask them to teach me when I don't really know them too well personally (from my local masjid) and haven't done much study myself? JazakAllahu khayr

Start with a class that's offered to the public, don't ask a teacher to teach you something unless you know they can (and have the time for it.)

If the Imam recites in Warsh or other than Hafs in Maghrib or Isha, is it permissible for me to recite the Fatiha in the 3rd and 4th (for isha) rakah in Hafs because I heard mixing qiraat in salah invalidates it?

It's fine, and it doesn't. It shouldn't be done out loud because it may cause fitnah.

Can one use the Hoor Al Ayn as a motivation of doing good? Can one use the Hoor Al Ayn as an intention before going a good deed? eg I intend on doing such-and-such good deed so I may enter Jannah and enjoy the Hoor Al Ayn? Serious question

Of course.
If I tell you to chop wood for fifty years, you'll say that's crazy and leave. If I tell you chop wood for fifty years and you'll have a billion dollars, you'll consider it.
If I tell you to chop wood for fifty years and you'll have a billion dollars, and if you don't then a terrible thing will happen to you. Now it's reasonable to say that my words should be taken seriously.
Aisha, may God be pleased with her said (paraphrasing) that the description of Paradise and Hellfire was first revealed before anything else, so that people would yearn to it, and seek to do the commands to reach it. Had God only revealed: do not cheat, do not drink alcohol. People would've said: we don't need this religion.
But that's all kindling wood to help you get started, after that you'll need the real fuel; the yearning to meeting God.

Sheikh, if somebody makes two mistakes in the prayer that each only necessitate sajdah sahw, does 1 "set" of sajdah sahw suffice, or is it one "set" per mistake? And if anybody has done one of the two which ends up being incorrect does that make those prayers invalid?

One set suffices.

ايام الاتنين والخميس هل يجوز صيامها بنيه قضاء ايام عليا من رمضان 2012 + نيه صيام التطوع ؟!

القاعدة العامة: لا يصح جمع نية الفريضة مع النافلة. فإذا نويت فسد الفرض، وصح النفل فقط.
أما التفصيل: لك ان تنوي صيام قضاء الفرض في وقت مبارك، كالاثنين والخميس، إذ بركتهما نابعة من حيث كونهما اثنينا وخميسا، ترفع في ليلتهما الاعمال، فيرجى لمن صامهما القبول وزيادة في الأجر.
وكذا قضاء صوم فريضة في يوم عرفة، والثمان التي تسبقه من ذي الحجة، وعاشوراء ونحوها.

In my culture we kiss the hands of elders like uncles and aunties. However some people say this, along with putting hands on the chest after giving salam, is haram. Is it haram?

Kissing The hands of family elders and the righteous is permissible, even encouraged if it's culturally acceptable.
Kissing The hands of tyrants, kings and rich people, for their might and wealth, is strongly discouraged, and can be prohibited.

I noticed that I'm usually more confident among non-Muslims in any aspect. I'm more confident to speak my mind etc., but among Muslims (in gatherings, meetings regarding social work etc.) I'm more shy&humble, I tend to listen more& speak less and in a more "humble" tone. Is this a sign of hypocrisy?

Not sure what you mean but if you're looking for exercising, there are a few gyms and swimming pools for women only in Ottawa.

Salam Sheikh, I'm trying to model my life in a path that seems similar to yours (I'm an engineerng student trying to go twrds PhD). I was wondering how/when you managed to study Islam to get to your level of knowledg? I'm at a disadvantag because I'm trying to learn Arabic, but a general idea helps!

Please pick a better role model. Study the biographies of the salaf.

لو سمحت هو أنا المفروض أغض بصري عن الخاطب من امته؟ بمجرد القبول، واللا بالعزم على الخطبة؟ واللا امته؟!

غض البصر هو الأصل عن الرجال، يستثنى منه وقت الرؤية الشرعية. فإذا تمت الخطوبة، عاد الأمر بالغض لأنه لا حاجة شرعية إليه حتى يتم العقد.
وبعدها تفرجي عليه زي ما حضرتك تحبي بالحلال.
